Ruby is the daughter of two beautiful breed examples.  Kai-La-Sha Telling Secrets (Tessa) is her mother and Yangchoo's From The Fire Nation (Zuko), is her father.  Ruby gets her name from a combination of her mother and father's registered names and her fiery personality.
